Trout, as many as you can eat!
Cornmeal
Salt & Pepper to taste
Oil

Preheat oven to 350º. Line a shallow baking pan with foil. Rinse and dry trout (you don't need to remove the scales.) Pan fry only long enough to brown fish on both sides. Remove fish from frying pan and place on foil-lined baking pan. Bake for 20 minutes. Drain. Drizzle lemon juice over fish and serve.

Not only does this recipe give the cook more time to prepare the rest of the meal, it delivers tasty trout that have less grease and they are all hot at the time of serving. This recipe works well with small and large trout.
