1 lb rotini pasta
1 jar Trader Joe's sun-dried tomatoes in olive oil, drained and oil reserved
2 cans plain artichoke hearts (not marinated), drained and quartered
1 jar Trader Joe's roasted red and yellow bell peppers, drained and chopped
1 jar Trader Joe's pitted Kalamata olives, drained and halved
1 1/2 logs fresh marinated mozzarella cheese, diced
1/2 cup chopped basil
1/2 cup balsamic vinegar
1 cup chopped chicken (optional)
1 tsp dried oregano
salt
pepper

Directions:

Cook pasta, drain, and let cool. Add all remaining ingredients except vinegar, salt, pepper, and oregano. Stir until well combined. Add the reserved oil from the sun-dried tomatoes. Add balsamic vinegar, seasonings, and oregano. Chill.
