1 Pillsbury pie crust
4 Mutsu, Granny Smith or any crisp, tart baking apples
1/2 tsp cinnamon mixed in 1/2 cup sugar
1 cup sugar
2 cups water
2 tsp cinnamon
5 Tbsp butter, divided

Preparation Time: 30 minutes

Preheat oven to 425 degrees. Roll pie crust to about 1" larger in diameter. Cut into quarters. Peel and core apples.
Place cored apple in the center of one of the crust quarters. In the cored area, put 1/2 tbsp of butter and 1 T of cinnamon sugar. Wrap the dough around the apple, covering the top of the apple and seal. Put apples in baking dish that is at least 2" deep. In a sauce pan mix water, sugar, 3 Tbsp of butter and cinnamon. Bring to a boil. Pour over dumplings. Bake for 45 minutes. (Cover the top of each dumpling with a small piece of foil to prevent burning.) Enjoy.

My mother must have made hundreds of these dumplings over the years. Easy and so yummy served warm with vanilla ice cream.
