4 egg whites, beaten slightly
1/4 tsp. cream of tartar
1 c. sugar
4 egg yolks
1/2 c. sugar
3 tbsp. lemon juice
1 carton Rich’s Whip Topping

Directions:
Directions:
Add cream of tartar to egg whites. Add sugar, a little at a time and beat until glossy. Put into a well greased 9” pie pan. Bake at 275º for 1 hour. Crust will fall while cooking – do not worry! Beat egg yolk slightly, add 1/2 c. sugar and lemon juice (maybe 1 tbsp. more). Cook in double boiler until thick. Cool. Whip topping and fold lemon mixture in. Put on meringue crust and refrigerate.
