2 lb. lean ground turkey
2 c. bread crumbs, preferably whole wheat
4 eggs
1/2 c. milk
3/4 c. fresh parsley, chopped
1 c. Romano cheese, grated
1 T. olive oil
4 cloves of garlic
1 onion
1 tsp. salt
1/2 tsp. black pepper
vegetable oil for shallow frying

Directions:
Directions:
1. Finely mince the garlic and onion.
2. Mix together all ingredients in a large bowl.
3. Let rest for at least 30 minutes.
4. Using your hands, roll into one inch circles.
5. Heat small amount of vegetable oil in large skillet.
6. Shallow fry meatballs, rotating frequently until all sides are browned.
7. Once cooked through to an internal temperature of 165º, remove from oil and place on paper towels to drain.
8. Serve warm.

Makes 65 small meatballs
