1 lb. sausage
5 eggs
1 pkg. frozen chopped spinach drained and
pressed to remove moisture
2 cups shredded mozzarella cheese
2/3 cup ricotta cheese
1 shallot chopped fine
1/2 tsp. pepper 1/2 tsp. salt
1/2 tsp. garlic powder
pkg . of refrigerated pie crust
1 egg beaten with water

Directions:

cook sausage till brown, drain and cut into 1" pieces. In a bowl, combine sausage, eggs, spinach, mozzarella. cheese and the rest of the ingredients.

Line a pie plate, or quiche dish with one of the pie crusts. Fill with egg and sausage mixture and top with remaining pie crust.
Crimp edges and poke a few holes in the top. brush with the egg and water mixture.

Bake 375F. for 1 hr.15 min. Let stand 10 minutes before serving.
