Ingredients:  
1 tsp. vegetable oil
1 onion chopped
3 cloves garlic peeled
3/4 c. uncooked quinoa
1 1/2 c. vegetable broth
1 tsp. ground cumin
1/4 tsp. cayenne (or you can leave this out and sprinkle to taste at the table)
1 c. frozen corn
2 cans black beans, drained and rinsed
1/2 c. chopped cilantro

Directions:

Heat oil in medium saucepan or medium heat. Stir in onion and garlic and saute until lightly browned. Mix quinoa into pan and cover with broth. Season with cumin, cayenne, salt and pepper. Bring to boil, cover, reduce heat and simmer 20 min. Stir frozen corn into pan and continue to simmer 5 min. until heated through. Mix in beans and cilantro.
