1 large onion
1 medium carrot sliced
1 small stalk celery (with leave) sliced
1 clove of garlic - minced
3 cups chicken stock
1/4 cup uncooked rice
3 cups coarsely chopped broccoli
2 cups milk
1teaspoon milk
1 teaspoon salt
pinch of cayenne pepper
Cheddar cheese grated to sprinkle on top of individual servings

In a large sauce pan, combine onion, carrot, celery, garlic and chicken stock; bring to a boil. Add rice, cover and simmer for 15 to 20 minutes or
until rice is tender. Add broccoli, cover and simmer until broccoli is tender, about 5 minutes. Transfer to blender, or use a hand held blender,
and puree. Return to saucepan, add milk
Serve hot with grated cheese on top.
