SALAD
1 lb. dried black beans, rinsed and picked over
3 qt.s water
3 cs. diced celery
2 medium red onions, chopped
1 1/2 cs. cilantro, coarsely chopped
4 tsps. coarse salt
2 tsps. ground cumin
1 1/2 tsps. ground pepper
1/2 tsp red pepper flakes

DRESSING
1/2 c. extra virgin olive oil
3 T. red wine vinegar
1 clove garlic, minced or rasped
1 tsp. Dijon or Nance's mustard

Bring beans and 1 qt. water to a boil. Remove from heat. Cover and let stand 1 hour. Drain beans and return to pot. Add 2 qts. of water. Bring to a boil, reduce heat, cover and simmer 45 minutes to and hour until tender but not mushy.
Drain beans and put in a large bowl. Add remaining salad ingredients. Mix dressing well. pour over salad and toss to coat.

This recipe takes time but it makes tons and often is the first empty bowl at pot luck but it is not for those who dislike cilantro.
