3 large green peppers
1 lb pork sausage (mild or hot)
1 11oz can Mexicorn
Cheddar Cheese

Directions:
Directions:
Remove stems from peppers and halve the pepper top to bottom. Boil or steam until peppers are tender ( about 5 minutes). Remove and place in baking dish. Crumble sausage and cook in skillet until done. Pour off grease. Drain most of the liquid from the canned corn and mix with sausage in the skillet. Heat until the liquid boils off (5 to 10 minutes). Spoon mixture into pepper halves, Cover each with a slice of cheddar cheese. Bake 15 minutes in oven at 350 . 6 servings

Fat content in this recipe can be reduced by using low fat cheese, low fat sausage, and rinsing the cooked sausage after pouring the grease from the pan.
