2 qts.milk
2 eggs
1 c. sugar
1 tsp. vanilla extract
2 tbsp. cornstarch
1/2 c. cold milk
raisins, if desired
cinnamon for mandatory garnish

Directions:
Beat the eggs and mix into the milk. Bring the milk mixture to a boil. Add the rice and start stirring. Lower the heat to simmer. Add the sugar. Dissolve the cornstarch in the cold milk. Add to the mixture. Add vanilla. Keep stirring over very low heat until thick. This may take anywhere from 45 minutes to 2 and 1/2 hours. Don't despair! Read a book while you're stirring! Add raisins if you like them. Top with whipped cream if you'd like and of course cinnamon!
