8 lbs. tomatoes 6 large onions 2 red peppers 2 green peppers 2 1/2 lbs. celery 1 1/2tbsp. mustard seed 1 1/2tbsp. celery seed 6 1/2c. sugar 2 1/2 c. vinegar
Chop red and green peppers, celery and onion. Pour 3/4 cup coarse salt over top of veggies. Let stand in colander to drain over night. Bring ripe tomatoes to a simmer. Add raw veggies,sugar, celery seed, mustard seed and vinegar. Bring to a boil. Simmer and seal in hot sterilized jars.
