1 (10 oz.) package baby spinach ( I pinch the stems off)
1 (12 oz.) carton small curd cottage cheese
1/2 c. chopped pecans toasted
1 can mandarin oranges drained
Dressing:
1/2 c. sugar
3 tbsp. vinegar
2 tsp. prepared horseradish
1/2 tsp. salt
1/2 tsp. ground mustard

Directions:
Directions:
Layer spinach, cottage cheese and nuts on salad plate or bowl.
Lay oranges on top, ( raspberries & strawberries are very good too). Drizzle with dressing just before serving
