"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Roasted Red Potatoes with Bacon and Cheese, by Tina Kahler, is from Our Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1/2 c. bacon ranch dressing 1/2 c. shredded cheddar cheese 1/2 package bacon sliced and browned (drain) 2 1/2 lb. small red potatoes quartered 1 tbsp fresh parsley chopped
1. Preheat oven to 350º 2. Mix dressing, cheese & bacon in large bowl. Add potatoes & toss lightly. Spoon into lightly greased 9x13 pan. cover with foil. 3. Bake 1 hour covered, then remove foil and bake an additional 15 minutes, or until potatoes are tender. Sprinkle with parsley
My family loves these, I often make this a batch and a half and bake 20 minutes longer. ( I still use the 9x13 pan)
