Pre-Prep and have ready:
3-4 cups steamed white rice and chill in fridge
3 scrambled eggs
1 small or 1/2 large onion chopped
1 small or 1/2 head cabbage cut into large bites
1lb Bacon
Pepper to taste (more is good with the cabbage)
1 cup frozen peas
Soy Sauce to taste
Hot Sauce to taste
4 green onions chopped

Pre-Prep the rice, scrambled eggs and have onion and cabbage chopped and ready to go. In large frying pan cook the bacon until crisp and brown. Remove and set aside bacon and keep the bacon grease in the pan. Have all ingredients ready to go because you want to cook quickly on a med-high heat just until each ingredient is heated thru. Keep bacon grease heated on med-high heat and add onions (not green onions -yet), cabbage and some pepper-saute a few minutes until they become soft. Add chilled rice and heat thru. Add a few dashes of Hot Sauce and more Pepper. Add a few plashes of Soy Sauce until rice has a light brown color and continue to heat. Add frozen peas and scrambled eggs. Take about 1/2 of the cooked bacon and crumble it into big chunks and add to rice. Add 1/2 of the chopped green onions stir in and remove from heat. Top the rice with the remaining bacon crumbles and green onions.

This is a great side dish with a Teriyaki Flank Steak off the grill or Grandma Nancy's Mustard and Brown Sugar Chicken Wings (Yum Yum). Great for lunch the next day too.
