1 cup wild rice
2 cups long grain white rice
1 large onion - finely chopped
1 red pepper - finely chopped
2 celery stalks - finely chopped
1/2 cup roasted pine nuts
1 cup parsley - finely chopped
salt and pepper to taste
1 cup water (add more or less according to need)
olive oil
carrots - finely chopped (optional)

Directions:
Directions:
Saute onion with oil. Add veggies and rice into pan. nearly cover with water and simmer for 5+ minutes until rice is parboiled. Add pine nuts and parsley and stuff into turkey, chicken or bake in casserole.

NB. If stuffing a turkey, rub outside of turkey with butter, salt and pepper and cover with foil to bake (approximately 20 minutes per pound) at 350*. Place onions, carrots, celery, and 1 cup water in pan for gravy.
