Red meat of choice
1 onion - finely chopped
3-4 cloves garlic - finely chopped
1/2 cup olive oil
2 ripe tomatoes - chopped
1 can tomato sauce
5-6 whole cloves
3 bay leaves
cinnamon to taste
salt and pepper to taste
1/4 cup red wine

Boil meat for 1 minute to remove blood. Discard water.
Brown onion and garlic in oil. Add meat to brown as well. Last 1/2 hour, add wine.
Add all to stove top pot and cook 1 1/2 - 2 hours until meat is tender.

To make Guivetsi, follow above recipe. Add 2 cups orzo and place in oven with water. Cover and cook in casserole until orzo is tender, 20-30 minutes.
