Cake:
1 c. Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
1/2 tsp. Salt
3/4 c. Brown Sugar
1/3 c. Vegetable Oil
1 1/2 c. Coarsely Grated Carrots
2 Eggs
1/2 c. Raisins
1/2 c. Coconut
1/2 c. Drained Crushed

Cake:
1. Preheat oven to 350º
2. Sift dry ingredients, except sugar
3. Beat eggs, add oil and sugar, mix.
4. Add grated carrot, mix
5. Add dry ingredients to the mixture.
6. Add raisins, coconut, and pineapple, mix until consistent and smooth.
7. Pour batter into a greased 9 in cake pan
8. Cook at 350º for 30-35 min. until toothpick inserted into center comes out clean.

Frosting:
Frost with 1/2 Cream Cheese Frosting recipe.
