5 c. cooked & shredded chicken
3 T butter
1/4 c. flour
1 1/2 c. chicken broth
1 can (5 oz) diced tomatoes with green chilis
1 T chopped jalapeño pepper
1/2 tsp ground cumin
1/2 tsp chili powder
1/4 tsp garlic powder
1/4 tsp salt
1/2 of 15 oz can of chili beans
4 oz cream cheese (cut in cubes)
12 flour tortillas
3 c. shredded Colby jack cheese

Directions:

Preheat oven to 350º
In large skillet melt butter, stir in flour until well blended. Slowly stir in broth & bring to a boil. Boil for 2 minutes. Add tomatoes, jalapeño pepper and seasonings. Cook for 5 minutes on medium-low. Stir in chili beans & cream cheese until melted. Turn off burner and add chicken. Spoon about 1/2 c. into tortilla, sprinkle with 1/4 cup shredded cheese, roll and place in greased 9x13 baking dish.
Bake for about 25 minutes.
