1 medium Eggplant
1 medium onion, minced
2 T. (1/4 stick) butter or margarine
2 Hard-boiled eggs
Salt & Pepper to taste

Directions:
Preheat oven to 450º. Pierce the eggplant with a fork. Place the eggplant on a foil-lined baking sheet and cook about 20 minutes, or until soft. Remove from the oven, cool, and peel off the skin. In a small frying pan, saute half the minced onion in butter, turning occasionally with a fork. Grind the eggplant, fried and raw onions, and eggs in a food processor until they are the consistency of chopped liver. As salt & pepper to taste. Refrigerate. Remove from fridge 30 minutes before serving.
