12 blintzes-- commercial or homemade
4 eggs
1/2 c. sugar
1 t. vanilla
1 stick butter, melted
1 1/4 c. sour cream (low fat)
1/4 c. orange juice

Directions:
Directions:
Preheat oven to 350º. Place blintzes in a single layer in a buttered baking dish. If using commercial blintzes, they can be still frozen. Beat the eggs thoroughly. Combine the remaining ingredients and add to the egg mixture. Pour over blintzes. Bake for 45 minutes. Can be set up the night before and baked the next day.
