1 c. butter or margarine, at room temperature, 1 c. brown sugar, 1/2 c. white sugar, 2 eggs, 1 tsp. vanilla, 2 c. flour, 1 tsp. baking soda, 1/2 tsp. baking powder, 1/2 tsp. salt, 1 c. flaked coconut, 1/2-1 c. chopped walnuts, 2 c. corn flakes, slightly crushed.

Preheat oven to 375º. Mix the ingredients in the order given. Drop by heaping tablespoons on a sprayed cookie sheet. Bake 12 minutes or until brown. Cool a minute, then move to cooling racks. Makes about 32 cookies.

These cookies are crunchy but chewy, and they keep well (if you hide them). They also freeze well. You can omit the coconut or nuts if you want to and they're still good.
