4-5 medium size russet potatoes cubed
1 medium onion finely chopped
2 stalks celery diced
2 C chicken broth or bullion
3 T parsley flakes
1 tsp celery salt
2 C milk
2 T butter
2 T corn starch
1/4 C water
1 lb bacon
1 pkg shredded sharp cheddar cheese
several diced green onions

In a large soup pot melt butter and saute' onions, celery, potatoes and parsley until onions are transparent. Pour in chicken broth/bouillon and bring to a rolling boil. Reduce heat to medium/low and cook until potatoes are fork tender. Add celery salt. Add milk. Mix cornstarch and water well and pour into pot. Heat until it's the thickness you want.....you want it to be quite thick so if it needs more make more cornstarch mixture and add it. Fry and crumble bacon. Serve hot in bowls with cheese, then bacon then green onions on top. Add a dollop of sour cream if you want.
