½ cup margarine
½ cup oil
1 ¾ cup sugar
2 eggs
1 tsp. vanilla
½ cup buttermilk or milk
2 ½ cup flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup cocoa
1 tsp cinnamon
2 cup zucchini
½ cup coconut
½ cup chocolate chips
½ cup pecans or walnuts

Directions:

In large bowl mix together margarine, oil and sugar; add eggs, vanilla and milk and mix well. In another bowl combine flour, soda, baking powder, salt, cocoa, and cinnamon. Mix dry ingredients with egg mixture. Fold in zucchini, coconut, chocolate chips and nuts. Pour into muffin pan lined with baking cups. Bake at 350º for 15-20 minutes. Makes 24 large muffins.

These muffins freeze well. Just thaw and enjoy! This recipe can also be made as brownies in a bar pan.
