4 c. uncooked non sticky rice
6 chicken breasts chopped in to bite size pieces
2 sticks of butter
1 and 1/2 lb. uncooked broccoli
2 c.shredded Parmesan cheese
1 lg. onion finely chopped
2 cloves garlic
2 c. chicken stock
1 c. bread crumbs
1/4 c. finely chopped parsley
salt and pepper to taste

Follow directions to rice and cook using 1/4 c. less water and 3 minutes less time. While rice is cooking, in a large skillet melt butter and saute onions and the chopped, lightly seasoned chicken pieces until tender and add crushed garlic. Turn off fire and let sit. While chicken is cooking in another pot steam the cleaned broccoli careful not too long so it doesn't get mushy. Once the broccoli is cooked move to a chopping board and chop into small pieces. In a very large mixing bowl combine chicken, onions and drippings, chopped broccoli, rice, chicken stock and Parmesan cheese. Mixture should be damp but not running with liquid, so carefully add the chicken stock to ensure the right consistency. Mix all ingredients very well, taste and adjust seasoning if necessary. Transfer mixture to a large casserole dish or two if necessary, top with bread crumbs and place in a preheated 325 degree oven for 30 minutes. Remove and sprinkle top with parsley.
