4 pkgs Knox unflavored gelatin (1 box)
1 cup cold water
4 cups boiling water
1/2 cup sugar
1 can (28 oz) Kesar brand mango pulp
1 cup evaporated milk
1-3 fresh mangoes sliced and diced (optional)

Directions:
Directions:
Dissolve Knox gelatin in 1 cup cold water. Set aside for 3 minutes.
Bring 4 cups water and 1/2 cup sugar to boil dissolving the sugar completely. Add Knox gelatin stirring to dissolve.
Remove from heat, whisk in mango pulp, add evaporated milk slowly and stir. Pour into a mold and refrigerate overnight.
If you want diced mango in the pudding, set aside to thicken 1-2 hours then stir in the mango pieces.

Terri says to only use Kesar brand mango pulp, which can be found at any Middle Eastern grocery store.
