Lemon Meringue Pie Recipe

1 1/2 c sugar
1 1/2 c water
1/2 tsp salt
1/2 c cornstarch
1/3 c water
4 egg yolks
1/2 c lemon juie
3 Tbsp butter

Combine sugar, water and salt. Boil. Mix cornstarch with 1/3 cup water. Stir into boiling mixture. Cook until thick and clear. Remove from heat slowly. Add beaten egg yolks and lemon juice. Return to heat and cook until bubbly. Remove and stir in butter. Cover and cool. Pour into baked pie shell.

4 egg whites
1/4 tsp salt
1/2 c sugar
Start whipping egg whites and salt. Add sugar and beat until glossy. Pour on top of pie and bake 325 for 15 minutes
