1 large onion, chopped
1 T olive oil
2 tsp. minced or pressed garlic
1 28 oz. can crushed tomatoes
1 tsp. each basil and oregano
2 T parmesan cheese, grated
12 oz. pasta (like penne or farfalle), cooked and drained
1 1/4 cup ricotta cheese
1/2 cup mozzarella cheese, shredded

Directions:
Directions:
Heat oil. Saute onion over medium-high heat in oil about 6 minutes or until translucent. Add tomatoes garlic and seasonings. Bring to a boil, turn down heat and simmer 7 - 8 minutes. Remove from heat and stir in parmesan cheese. Spoon hot pasta onto plate. Top with 1/4 cup ricotta cheese, then with 3/4 cup hot tomato sauce and 1 1/2 tsp. mozzarella. Serves 4 - 5.
