2 c. cooked yellow squash
1 stick margarine
2 eggs
1 c. chopped onion
1 c. evaporated milk
1 c. grated cheddar cheese
1 t. salt
1/2 t. pepper
2 c. saltine crumbs

Directions:
Directions:
Drain cooked squash. Add margarine, stirring to melt. Add remaining ingredients, blending well. Bake uncovered in greased 2 qt. casserole @ 375º for 40 minutes.

Sliced water chestnuts and/or sliced slivered almonds can be added. Also, this dish can be frozen before baking and used later.
