Sirloin or tenderloin
Flour
Salt & Pepper
2 T butter plus some additional
1 small onion, sliced
1 cup sliced mushrooms
1 can beef consomme soup
1/2 cup sour cream
cooked noodles (egg noodles)

Directions:
Directions:
cut beef into 1" strips. put in large plastic bag with flour, salt and pepper to coat. Shake to cover all the beef, adding more flour as needed.

In large skillet, melt 2 T butter. Add sliced onion rings and mushrooms. Saute til soft, remove to bowl.

Add more butter and add beef, browning. Once browned, reduce heat. Add consomme soup and simmer on low for 1 hour. Add mushrooms and onions and heat. Over low heat, stir in sour cream adding slowly, and stirring until consistency of gravy. Heat on low. Serve over noodles.
