3 T. butter
1 cup chopped onions
1 T. four
Sliced fresh mushrooms
1 9” unbaked pie shell unbaked/chilled
½ lb. Shredded Swiss cheese
1 (10oz.) package frozen chopped spinach
3 eggs
1 tsp. Salt
1 cup Half-n-Half

Directions:
Directions:
Spread piecrust with 1 T. butter. Cook onion in 2 T. butter for 5 min; spread onion in piecrust. Toss cheese with flour. Spread over onion. Add spinach (drained and squeezed dry). Beat eggs with half-n-half and salt. Add to crust. Slice fresh mushrooms over the top in a circular style overlapping mushroom edges.
Bake 10 minutes at 400. Bake 35-40 minutes at 325 until knife comes out clean.
Can be baked the night before and reheated in oven at 300 for 15 min.
