2 cans (14oz. Each) curly leaf spinach, drained and squeezed dry
1 T. butter or margarine
½ cup finely chopped onion
8 oz. Muenster cheese, shredded (2 cups)
4 large eggs
¼ cup all purpose flour
1 tsp. Baking power
1 tsp. Crushed red pepper
½ tsp. Ground nutmeg

Directions:

Heat oven to 350 degrees. Evenly spread well drained spinach on bottom of a 13x9x2 inch-baking dish. Melt butter in medium size skillet over medium high heat; add onion and cook until translucent. Spoon onion over spinach. Layer cheese on top. Whisk eggs until frothy in a large bowl. Add flour, baking powder and crushed red pepper; whisk until smooth. Pour over spinach-cheese mixture. Sprinkle with nutmeg. Bake 18 to 20 minutes until puffy and golden brown.
