Pastry for single-crust pie
4 cups sliced peeled peaches
2 T. peach preserves
1 cup sugar
1 cup sour cream
3egg yolks
1/4 cups flour
1 t. vanilla
Topping
1/2 cup flour
1/2 cup packed brown sugar
3 T. chopped pecan ( optional)
1 t. cinnamon
1/4 cold butter

Directions:

Pre-heat oven to 425º. Combine peaches and preserves. Transfer to a pastry. In a small bowl combine sugar, sour cream, egg yolks, flour and vanilla. Whisk together. Pour over peaches. Bake for 30 minutes. Combine flour, sugars, pecan's and cinnamon. Cut butter until crumbly; Sprinkle over pie. Bake for 15 -20 minutes or until a knife inserted into center comes out clean and topping is golden brown.
