1/4 cup shortening
1 cup sugar
2 eggs, beaten
lemon peel from 1 lemon (save for juice)
1 3/4 cups sifted flour
1 tsp. baking powder
1/2 cup milk
Juice from 1 small lemon
1/4 cup sugar

Directions:
Directions:
Mix shortening, sugar and eggs well. Add lemon peel. Add flour and baking powder. Add milk and stir. Bake in a well greased loaf pan at 350 for 1 hour or until done. Cover with foil if the top is getting too brown and the bread is not yet done. While bread is still warm, mix the 1.4 cup sugar and lemon juice. Pour over bread to make a glaze.

This makes one regular sized loaf or three mini loaves. 1/8 cup applesauce can be substituted for the shortening to make this lowfat.
