arugala, mixed mesclun greens, butter lettuce, endive or friseee mix

2 teaspoons of white vinegar

3-4 drops of balsamic vinegar

salt

1 teaspoon of dijon mustard

3 tablespoons of EVOO

1 shallot thinly sliced or diced

1 tablespoon of tarragon

1tablespoon of chives

Directions:
Directions:
mix white vinegar, balsamic vinegar and salt until salt dissolves. mix in dijon mustard. slowly drizzle in EVOO. Add shallots, tarragon, and chives. Add greens to bowl with dressing.
With the fresh herbs this is also delicious.
