2.5 lb Red Potato's 8-9 med
1/2 lb diced Bacon
1/2 cup diced onion
2 Tbsp cider vinegar
2 tbsp sugar
2 Hard cooked Eggs
1 1/4 cup Mayo
1 rib of celery sliced thin
1/2 tsp Salt and 1/4 tsp pepper

Directions:
Directions:
Simmer Potato's in water until tender
Drain,cool,peel and cut potato's into cubes
Place potato's in large bowl and sprinkle with salt and pepper: add chopped eggs,onion,celery, top with mayo- do not mix yet
cook bacon till crisp (keep grease) - chop and add bacon to bowl
Add vinegar & sugar to warm bacon grease and stir until sugar disolves
Pour grease mixture over potato's and mix.
Chill for at least 1 hour
