2 lbs yellow squash, sliced
1/4 C onion chopped
1 can cream of chicken soup
1 C sour cream
1 C carrots, shredded
1 pkg (8oz) herb seasoning stuffing mix
1/2 C butter or margarine, melted

Directions:
Directions:
Cook squash and onion in boiling water for 5 minutes; drain. Combine soup and sour cream and stir in carrots. Fold in squash and onion. Combine stuffing mix and butter. Spread half of mixture in bottom of a 12 X 7 1/2 baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing over vegetables. Bake at 350º for 25 - 30 minutes.
