2 to 3 pounds chuck steak
1/2 cup flour
1 cup tomato juice
1 cup water
1 1/2 teasp. salt
1/4 teasp pepper
1/4 cup salad oil or fat
2 cups sliced onion
1/4 pound mushrooms, sliced (or 1-3ozcan sliced)
6 cups cooked noodles
1 cup sour cream

Trim excess fat from meat and cut into small pieces. Put in skillet; place over low heat and cook until fat runs freely. While fat cooks, cut meat into strips 2x 1/4x1/4" and roll in flour. Then brown in the hot fat. Add tomato juice, water, salt , and pepper. Cook, covered over low heat until almost tender, 15-20 minutes, stirring occasionally.

Heat salad oil in another skillet. Add onion and mushrooms and cook over medium heat until brown. Add to the meat mixture and continue cooking covered an additional 5-10 minutes, or until meat is tender.

Stir in sour cream or pour meat mixture over noodles on a large platter and top with sour cream. Garnish with spiced pears.

Don't try to serve over 6 people- not enough, round steak can be used, Can be prepared day before, but omit sour cream. Add sour cream when you re-heat in chafing dish - fold in cream when mixture starts to bubble.
