1 1/2 c. coarsely chopped cranberries
1 1/2 c. sugar, divided
2 1/2 c. flour
3/4 c. vacuum packed wheat germ, reg.
3 1/2 t. baking powder
1 t. salt
grated peel of 1 orange
3/4 c. shortening
1 cup milk
3 eggs
1 t. vanilla
1/2 c. chopped nuts

orange glaze:
Blend 2 T. soft butter,
2 c. powdered sugar
2 T. orange juice until smooth.
Double for tube cake

Directions:
Directions:
Toss cranberries and 1/4 cup sugar. Set aside. Combine remaining sugar with flour, wheat germ, baking powder, salt, and orange peel. Add shortening and milk. Beat 2 minutes at medium speed. Add eggs and vanilla. Beat 1 minute more. Mix in cranberries and nuts.

Pour into greased and floured 9x13 pan or a tube or bundt pan. Bake 350º for 40-45 minutes. Spread with orange glaze when cool.
