throw a jar of salsa, a can of corn (or frozen corn), a can of rinsed black beans in the crock pot with your chicken. You can use boneless or bone in, you just need to adjust the cooking time accordingly.

When the meat is cooked, take it out and shred it.

You can use the shredded meat, corn & beans for tacos/burritos or serve it over rice or as a topper for baked potatoes.
