2 cups mayonnaise
cup chopped fresh tarragon or cup chopped fresh parsley and 2 tsp. Dried tarragon, crumbled
3 T. finely minced green or red onion
2 T. fresh lemon juice
2 T. chopped capers
tsp freshly ground pepper
Salt
Vegetable oil
6 salmon steaks (about pound each), cut 1 inch thick
Lemon or lime slices, halved (garnish)
Tarragon sprigs (garnish)

Combine mayo, tarragon, onion, lemon juice, capers, and pepper in large bowl and blend well. Season with salt. Cover and chill 2-24 hours.
Arrange rack over grill or broiler pan about 5 inches from heat source. Brush rack with oil. Preheat coals or broiler. Place salmon steaks on rack and spread top of each with 2 to 2 T tarragon mayo. Broil 6 min. Turn fish over and spread with another 2 to 2 T. sauce. Broil until tip of knife pierced into middle of steak near center bone meets little resistance, 4 to 6 more minutes. (Fish should be barely opaque with touch of deeper pink coloring remaining.) Arrange on serving platter. Garnish with lemon or slices and tarragon sprigs. Pass remaining tarragon mayonnaise.
