2 cups mayonnaise
¼ cup chopped fresh tarragon or ¼ cup chopped fresh parsley and 2 tsp. Dried tarragon, crumbled
3 T. finely minced green or red onion
2 T. fresh lemon juice
2 T. chopped capers
¼ tsp freshly ground pepper
Salt
Vegetable oil
6 salmon steaks (about ½ pound each), cut 1 inch thick
Lemon or lime slices, halved (garnish)
Tarragon sprigs (garnish)

Directions:
Combine mayo, tarragon, onion, lemon juice, capers, and pepper in large bowl and blend well. Season with salt. Cover and chill 2-24 hours.
Arrange rack over grill or broiler pan about 5 inches from heat source. Brush rack with oil. Preheat coals or broiler. Place salmon steaks on rack and spread top of each with 2 to 2 ½ T tarragon mayo. Broil 6 min. Turn fish over and spread with another 2 to 2 ½ T. sauce. Broil until tip of knife pierced into middle of steak near center bone meets little resistance, 4 to 6 more minutes. (Fish should be barely opaque with touch of deeper pink coloring remaining.) Arrange on serving platter. Garnish with lemon or slices and tarragon sprigs. Pass remaining tarragon mayonnaise.
