2-3 (9oz) packages refrigerated cheese-filled tortellini, cooked
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 (14 oz) can artichoke hears, drained
cup sliced ripe olives
1 cucumber, peeled and chopped
16 oz. Caesar Dressing (I use Creamy Paul Newmans)
6 oz. freshly grated Parmesan cheese

Directions:
Directions:
Combine tortellini, bell peppers, artichokes, olives, and cucumber in a large bowl tossing well. Add half of dressing, tossing to coat.
Cover salad and chill 2-3 hours. Toss with remaining dressing, if needed, before serving. Sprinkle Parmesan over top and toss again.
