6 oz. feta cheese, crumbled
½ cup chopped green bell pepper
½ cup chopped yellow bell pepper
½ cup chopped red onion
1 cup roasted pine nuts, coarsely chopped
2 oz. pimento, drained
4 oz. chopped ripe olives
1 (7oz) package long-grain and wild rice mix, cooked
1/3 cup olive oil
2 T. tarragon wine vinegar
Dash of pepper

Directions:
Directions:
Combine feta cheese, bell peppers, onion, pine nuts, pimiento and olives in a large bowl; add cooled cooked rice, stirring well.
Whisk together oil, vinegar, and pepper; pour over rice mixture, tossing gently to coat. Cover and chill up to 24 hours.
