-Mix together the following ingredients.
3 eggs
2 c. sugar
1 c. cooking oil
2 c. grated unpeeled zucchini

-Add the following ingredients.
2 c. flour
tsp. salt
tsp. baking powder
2 tsp. vanilla
2 tsp. cinnamon
2 tsp. baking soda
1 c. chopped nuts (optional)


Directions:

-Pour into 2 greased bread pans.
-Bake at 350 for 1 hour.

*To freeze zucchini cut into small pieces and shred in a blender. Pour into container amount to be frozen. (two cups per container/bag is sufficient and helpful when making bread in the future)
