20-25 tomatillos
4-5 serrano peppers (can take seeds out)
1 bunch cilantro (optional)

Directions:
Directions:
Remove Husks from tomatillos and wash. Place tomatillos and peppers in boiling water for a few minutes until some of the skins split (don't let them get too mushy).
Remove from boiling water, cool slightly and place in a food processor. Run until finely chopped. Salt to taste

May add cilantro, avocado, garlic and onion if desired. May be kept in refrigerator for 3 weeks or may be frozen. Use on chicken enchiladas.
