2 c. cooked beans, kidney or other
1/2 c. chopped onion
1/2 c. chopped green pepper
1 tomato, diced
1/4 c. diced black olives
1 c. corn
1 clove garlic, minced
1 tsp. cumin
1 to 3 tsp. chili powder
1/4 tsp. oregano
1 c. grated sharp cheese
1/2 lb. ground beef, browned (optional)
1 recipe cornbread

Directions:
Directions:
Simmer beans in their cooking liquid with vegetables and spices for 10 minutes. Stir in half the cheese, and the beef, if desired. Prepare cornbread batter. Pour half the batter into oiled 10" pie plate or 9x13" pan. Add the hot bean mixture, then remaining batter. Bake at 425º for 15 minutes. Top with rest of the cheese. Bake 10 minutes longer.

I usually add a little milk or water to last half of cornbread batter, to make it easier to spread on top.
