8T unsalted butter
8 oz semi-sweet chocolate (chopped) (can also use other types of more rich chocolate)
5 eggs, room temp, separated
3/4 c sugar
2t vanilla
1/2 t salt
1 1/2 c chocolate ganache icing
raspberries
2 c whipped cream
Directions:
Directions:
- In metal bowl over simmering water, melt chocolate w/butter and stir until smooth and creamy.
- Remove from heat.
- Beat egg yolks w/sugar and vanilla until thick
- Whisk egg whites w/salt until stiff
- slowly fold chocolate into yolk
- Fold in whites

Pour batter into greased/flour'd 9" springform pan

Bake 350º for 35-40 minutes

8 oz semisweet chocolate and 1/2 c heavy cream

Melt chocolate w/cream in metal bowl over pot of simmering water. Don't let boil. Remove from heat
