"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1/3 C water
1 C all purpose flour
1 tsp baking powder
1/4 tsp soda
1 C sugar
2 eggs
1 tbs lemon juice
1/2 C drained crushed pineapple

In a large saucepan combine apricots, raisins, and water. Cook over low heat, stirring occasionally, until water is absorbed. Cool slightly. Add remaining ingredients - except powdered sugar. Blend well. Spread in a greased 9 inch square pan.

Bake at 350 degrees for 35-40 minutes until golden brown. While still warm, cut into bars & sprinkle with powdered sugar. Can roll into powdered sugar again when cool.
