Spanakopita Spinach pitas Recipe

2 eggs
1 container cottage cheese
1 pound feta cheese
200 grams ricotta cheese
3 cups fresh spinach washed and drained, raw
2 bunches dill finely chopped
1 bunch mint finely chopped
1 bunch green onions finely chopped
Other fresh green herbs you prefer
coarse pepper to taste
filo pastry (krinos brand)
200 grams melted butter, use more if needed

Beat eggs then mix in cheeses and spinach.
Stir in pepper.
Cut filo into 3 inch strips, using two per pita.
Butter each layer of filo in between.
Use one heaping teaspoon to fill, and roll on and angle ending in a triangle.

Bake in preheated oven, 375*
Approximately 35 minutes, until golden.

NB Do not stack pitas when cooked as they get soggy
