Pre-soak white beans over night
cup carrot, chopped
cup celery, chopped
cup parsley
2 fresh tomato, peeled
2 tablespoons tomato paste
1 cup olive oil
1 large onion
salt and pepper to taste
water 6 inches above beans, add if needed

Directions:
Directions:
Pre-cook beans for 3 minutes. Discard water.
Add ingredients to pot, cover with water.
Boil on medium heat until beans are very soft.
Approximately one hour.
